Materials:
- 4 eggs chopped
- 2 avocados chopped
- 1/2 small cucumber chopped
- 2 spring onions diced
- 1/4 cup plain Greek yogurt
- 1 tbsp. mayonnaise
- Juice of 1/2 lemon
- Salt and pepper to taste
- Bread of your choice (optional)
Process:
- In a bowl combine the eggs, avocados, cucumber, spring onions, Greek yogurt, mayonnaise, lemon juice, salt and pepper. Mix well to combine.
- Place on your favorite slice of bread and ENJOY!
