Rice w/ Cinnamon Apples

Prep time: 15 minutes

Cook time: 70-80 minutes

Materials:

  • 3 cups white rice (cooked according to package instructions)
  • 5 Granny Smith apples sliced thinly
  • 10 tbsp. sugar
  • 4 tbsp. ground cinnamon
  • 2 cups applesauce
  • 5-6 tbsp. unsalted butter thinly sliced
  • Pinch of salt

Process:

  1. Cook the rice according to package instructions in salted water and set aside.
  2. Preheat the oven to 380 degrees F.
  3. In a large casserole dish with high sides add in a few pieces of butter on the bottom of the dish. Place 1/3 of the rice over the butter and smooth it out.
  4. Top with 1/2 of the apple sauce and 1/2 of the sliced apples.
  5. Season with half of the sugar and cinnamon.
  6. Top another 1/3 of the rice and the remaining applesauce, sliced apples, sugar and cinnamon.
  7. Top with the reaming 1/3 of the rice and top with the remaining butter slices.
  8. Cover with aluminum foil (so the rice doesn’t dry out) and bake 50-55 minutes.
  9. Let rest for 10-15 minutes and then ENJOY!
