Materials:
- 2 1/4 cup flour sifted
- 2 tsp baking powder sifted
- Pinch of salt
- 2 eggs
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter melted
- 1 tbsp. vanilla extract
- 2 medium sized Granny Smith apples chopped
- 1/4 cup dried cranberries
- 1/3 cup brown sugar
Process:
- Preheat the oven to 380 degrees F and line a cookie sheet with some parchment paper, set aside.
- In a medium sized mixing sift in the flour and baking powder. Add in a pinch of salt and toss to combine the ingredients. Set aside.
- In another mixing bowl add in the eggs, sugar and vanilla extract. Using a hand held mixer whip the mixture until it’s pale in color and fluffy (about 4-5 minutes).
- With the mixer running on low add in the melted butter.
- Start to gradually add in half the dry mixture. You can continue to use the mixer until it becomes to hard to mix.
- Add in the remaining dry ingredients and now use a spatuala or wooden spoon to mix the remaining ingredients.
- Add in the apples and cranberries and using the same spatula mix everything until its evenly combined.
- Using two tea spoons scoop a full spoon of the mixture per cookie. Place about 1/2 inch apart smoothing out the cookies with your hands (watch video for visual).
- Top with a sprinkle of brown sugar.
- Bake 25-28 minutes or until the bottoms are golden brown and the cookies are fully cooked through.
