Materials:
- 1 ¼ cup pumpkin puree
- 1 ¼ cup flour sifted
- 2 eggs
- 6 tbsp unsalted butter melted
- ⅓ cup brown sugar
- ½ tsp baking soda
- 1 tsp baking powder
- 1 tsp orange extract
- 1 tbsp. cinnamon
- ½ tsp nutmeg
- Pinch of salt
Process:
- Preheat the oven to 375 degrees F and line a loaf pan with some parchment paper.
- In a medium sized mixing bowl add in the pumpkin, eggs, sugar, orange extract and butter. Using a hand held whisk, mix until all the ingredients are incorporated.
- Add in the sifted flour, baking soda, baking powder, cinnamon, nutmeg and a pinch of salt. Mix well.
- Pour the mixture into the loaf pan.
- Bake 40-45 minutes or until a skewer inserted into the center comes out clean.
- Set aside to cool and ENJOY!
