Veggie Golombki (Onion & Mushroom Stuffed Cabbage

Prep time: 20 minutes

Cook time: 1 hour 45 minutes- 2 hours

Materials:

  • 1 large head of cabbage
  • 2 large onions
  • 3 garlic cloves
  • 16-18 oz. of mushrooms
  • 2 cups of white rice (before cooking)
  • Vegetable oil
  • Salt and pepper to taste
  • 1 cup of water

Process:

  1. In a large skillet add in the vegetable oil. Keeping the heat on medium high add in the onions. Season with salt and cook for a few minutes, stirring often until onions are cooked through.
  2. Add in the garlic and cook until fragrant.
  3. Add in the mushrooms and continue to cook until mushrooms are fully cooked through.
  4. Season with salt and pepper and set aside.
  5. Cook your rice according to package instructions and once fully cooked through add in the onion/ mushroom mixture. Mix well and season to taste. Set aside.
  6. Preheat your oven to 400 degrees F.
  7. Remove the core of the cabbage (watch video for visual) and place into salted boiling water.
  8. Once the leaves start to peel off take them out of the water and place them into a clean bowl.
  9. Once all boiled take a small knife and remove the hard vein of the cabbage (again watch video for visual).
  10. Holding the cabbage leaf in your palm scoop in about 1/2 cup (this will vary depending on size of cabbage leaf) of the filling. Roll the cabbage to cover the filling tucking the edges in, and place in a baking sheet.
  11. Pour in 1 cup of water into the baking sheet and cover the golombki with remaining leaves.
  12. Cover with aluminum foil and bake for 90 minutes.
  13. Let sit for 15-20 minutes, plate and ENJOY!
