Prep time: 15-20 minutes
Cook time: 23-25 minutes
Materials:
- 1 cup cooked quinoa (cooked according to package instructions)
- 10 large eggs
- 1 onion chopped
- 1 red bell pepper chopped
- 1 tbsp. Parmesan cheese
- 1/3 cup shredded mozzarella cheese (additional for topping)
- 1 tbsp. olive oil
- 1 tbsp. garlic powder
- 1 tsp dried basil
- Salt and pepper to taste
- Cooking spray
Process:
- Preheat the oven to 375 degrees F and grease the inside of your muffin tins with some cooking spray. Set aside.
- Add the olive oil to a medium sized skillet and place over medium/ high heat.
- Add in the onion and season with a pinch of salt.
- Cook for 3-4 minutes stirring often.
- Add in the pepper and cook for an additional 1-2 minutes. Remove from heat.
- In a large mixing bowl combine the eggs, cooked quinoa, cooked veggies, parmesan cheese and mozzarella cheese.
- Season with garlic powder, dried basil, salt and pepper. Mix well to combine.
- Scoop egg mixture into the prepared muffin tin.
- Cook for 18-20 minutes or until fully cooked through.
- Enjoy warm or cold on the go.
