Quinoa Breakfast Muffins

Prep time: 15-20 minutes

Cook time: 23-25 minutes

Materials:

  • 1 cup cooked quinoa (cooked according to package instructions)
  • 10 large eggs
  • 1 onion chopped
  • 1 red bell pepper chopped
  • 1 tbsp. Parmesan cheese
  • 1/3 cup shredded mozzarella cheese (additional for topping)
  • 1 tbsp. olive oil
  • 1 tbsp. garlic powder
  • 1 tsp dried basil
  • Salt and pepper to taste
  • Cooking spray

Process:

  1. Preheat the oven to 375 degrees F and grease the inside of your muffin tins with some cooking spray. Set aside.
  2. Add the olive oil to a medium sized skillet and place over medium/ high heat.
  3. Add in the onion and season with a pinch of salt.
  4. Cook for 3-4 minutes stirring often.
  5. Add in the pepper and cook for an additional 1-2 minutes. Remove from heat.
  6. In a large mixing bowl combine the eggs, cooked quinoa, cooked veggies, parmesan cheese and mozzarella cheese.
  7. Season with garlic powder, dried basil, salt and pepper. Mix well to combine.
  8. Scoop egg mixture into the prepared muffin tin.
  9. Cook for 18-20 minutes or until fully cooked through.
  10. Enjoy warm or cold on the go.
