Prep time: 15-20 minutes
Cook time: 2-3 minutes per batch
Materials:
- 1 lb. cleaned squid cut into 1/2 inch rings
- 1 cup flour
- 1/4 cup cornstarch
- 1/2 tsp baking powder
- 1/2 tsp garlic powder
- 1/4 tsp cayenne pepper
- 1 tbsp. salt
- Pepper to taste
- 2-3 cups neutral oil
Process:
- In a mixing bowl add in the flour, cornstarch, baking powder, garlic powder, cayenne pepper, salt and black pepper. Mix well.
- Pat your squid dry using a paper towel and place the cut rings into the flour mixture making sure each piece is coated with the mixture.
- In a skillet with high sides or medium sized sauce pan add in your oil. Let the oil heat up on high heat. You know it’s ready when you place the top of a wooden spoon into the oil and the oil starts to bubble around the spoon.
- Lower the heat to medium/ high and start to add in your squid in batches (so that you do not overcrowd the pan), making sure to shake off the excess flour from the squid.
- Cook each batch for 2-3 minutes and place on a paper towel lined plate.
- Plate along side some marinara sauce (optional) and ENJOY!
