Sprinkle Cookie Ice Cream Sandwiches

Prep time: 15-20 minutes

Cook time: 9-11 per batch

Materials:

  • 2 1/4 cup all purpose flour
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1 tbs. vanilla sugar or extract
  • 1 cup unsalted butter softened
  • 1/3 cup granulated sugar
  • 1/3 cup brown sugar
  • 2 egg at room temperature
  • Sprinkles of your choice
  • Vanilla ice cream

Process:

  1. In a medium sized mixing bowl combine the flour, baking soda, and salt. Mix well and set aside.
  2. In a separate bowl combine the butter, granulated sugar, and brown sugar, vanilla sugar or extract and mix until everything is incorporated and smooth.
  3. Add in one egg at a time making sure to mix well after each egg.
  4. Gradually start to add in the dry ingredients to the wet. Mix well and refrigerate for a few hours.
  5. Preheat the oven to 375 degrees and line some baking sheets with parchment paper. Taking about 2 tbs of cookie dough roll into a ball and then flatten slightly with your palms.
  6. Place the cookie in the sprinkles and coat the top.
  7. Place the cookie on the baking sheet (sprinkles side up), about 2 inches apart.
  8. Bake for 9-11 minutes
  9. Once cookies are cooled, add in desired amount of vanilla ice cream and sandwich it between two cookies.
  10. Roll the sides in more sprinkles and ENJOY!

To store these keep in either a air tight container or in Ziploc bags. Store well up to a few weeks.
