Prep time: 15-20 minutes
Cook time: 9-11 per batch
Materials:
- 2 1/4 cup all purpose flour
- 1 tsp. baking soda
- 1 tsp. salt
- 1 tbs. vanilla sugar or extract
- 1 cup unsalted butter softened
- 1/3 cup granulated sugar
- 1/3 cup brown sugar
- 2 egg at room temperature
- Sprinkles of your choice
- Vanilla ice cream
Process:
- In a medium sized mixing bowl combine the flour, baking soda, and salt. Mix well and set aside.
- In a separate bowl combine the butter, granulated sugar, and brown sugar, vanilla sugar or extract and mix until everything is incorporated and smooth.
- Add in one egg at a time making sure to mix well after each egg.
- Gradually start to add in the dry ingredients to the wet. Mix well and refrigerate for a few hours.
- Preheat the oven to 375 degrees and line some baking sheets with parchment paper. Taking about 2 tbs of cookie dough roll into a ball and then flatten slightly with your palms.
- Place the cookie in the sprinkles and coat the top.
- Place the cookie on the baking sheet (sprinkles side up), about 2 inches apart.
- Bake for 9-11 minutes
- Once cookies are cooled, add in desired amount of vanilla ice cream and sandwich it between two cookies.
- Roll the sides in more sprinkles and ENJOY!
To store these keep in either a air tight container or in Ziploc bags. Store well up to a few weeks.
