Prep time: 15-20 minutes
Cook time: 25-30 minutes
Materials:
- 2 Russet potatoes grated
- 1 large zucchini grated
- 2 large eggs
- 1/2 cup Panko
- 1/2 cup breadcrumbs
- 1/2 cup Colby Jack cheese
- 1/2 cup sharp cheddar cheese
- Salt and pepper to taste
- 1 tsp garlic powder
- 1 tsp parsley
- Cooking spray to grease pan
Process:
- Preheat the oven to 400 degrees F and line a baking sheet with some parchment paper. Spray with some non-stick oil and set aside.
- Grate the Russet potatoes and the zucchini. Salt with about 1 tsp salt and set aside for 5-10 minutes.
- Place the potatoes and zucchini in a cheese cloth and drain as much of the liquid as you can.
- Place the drained veggies in a clean bowl.
- Add in the eggs, Panko and breadcrumbs. Mix well.
- Season with garlic powder, parsley, salt and pepper. Mix to combine.
- Add in the cheese and mix.
- Take about 1/2 cup of the mixture and form into patties about 1 inch thick.
- Place on the prepared baking sheet and bake for 25-30 minutes, flipping over half way through.
- Once out of the oven hit the patties with some coarse salt, plate and ENJOY!
