Cheesy Zucchini Patties

Prep time: 15-20 minutes

Cook time: 25-30 minutes

Materials:

  • 2 Russet potatoes grated
  • 1 large zucchini grated
  • 2 large eggs
  • 1/2 cup Panko
  • 1/2 cup breadcrumbs
  • 1/2 cup Colby Jack cheese
  • 1/2 cup sharp cheddar cheese
  • Salt and pepper to taste
  • 1 tsp garlic powder
  • 1 tsp parsley
  • Cooking spray to grease pan

Process:

  1. Preheat the oven to 400 degrees F and line a baking sheet with some parchment paper. Spray with some non-stick oil and set aside.
  2. Grate the Russet potatoes and the zucchini. Salt with about 1 tsp salt and set aside for 5-10 minutes.
  3. Place the potatoes and zucchini in a cheese cloth and drain as much of the liquid as you can.
  4. Place the drained veggies in a clean bowl.
  5. Add in the eggs, Panko and breadcrumbs. Mix well.
  6. Season with garlic powder, parsley, salt and pepper. Mix to combine.
  7. Add in the cheese and mix.
  8. Take about 1/2 cup of the mixture and form into patties about 1 inch thick.
  9. Place on the prepared baking sheet and bake for 25-30 minutes, flipping over half way through.
  10. Once out of the oven hit the patties with some coarse salt, plate and ENJOY!
