Prep time: 8-10 minutes
Cook time: 2- 2 1/2 hours
Materials:
- 4-5 lb. pork loin
- 1 link Polish kielbasa
- 2 tbsp. vegetable oil (additional 3 tbsp. needed for frying)
- 1 1/2 tsp salt
- 1 tsp all spice crushed
- 1 tsp black pepper
- 1 tsp marjoram
Process:
- Place the pork loin on a cutting board and using a long knife make a slit in the center of the pork (watch video for visual), from one end to the other. If the pork loin is too long feel free to cut in half and do each section separately.
- In a large baking dish add in the vegetable oil, salt, pepper, marjoram and all spice. Mix roughly.
- Place the pork loin in the dish and roll around to coat the pork loin in the seasoning. Rub it in and cover with some plastic wrap.
- Refrigerate for a minimum of 2 hours.
- Preheat the oven to 380 degrees F.
- After two hours take the kielbasa (mine was long so I cut it in half) and stuff it into the hole that you made earlier (again watch the video for a visual).
- Pour the remaining oil into a large skillet. Heat the oil up and keeping the heat on high place the pork loin in the skillet.
- Cook for a few minutes on each side for several minutes and place back in the baking dish.
- Bake for 2 – 2 1/2 hours or until the pork loin is tender and fully cooked through.
- Let the loin sit for several minutes and then ENJOY!
