Grilled Fingerling Potatoes

Prep time: 10 minutes

Cook time: Depends on size of potatoes and heat of grill

Materials:

  • 1.5-2 lbs. fingerling potatoes (if large cut them in half)
  • 2 tbsp. olive oil
  • Salt and pepper to taste
  • 1/2 tsp fresh rosemary diced
  • 1 tbsp. dried oregano
  • Fresh parsley for garnish

Materials:

  1. In a large mixing bowl combine the potatoes, olive oil, fresh rosemary, oregano, salt and pepper.
  2. Mix well to combine.
  3. Place on a preheated grill (i use a veggie grill holder) and grill for 15-20 minutes over medium heat, or until the potatoes are fully cooked through and fork tender.
  4. Remove from grill onto a clean plate and garnish with fresh parsley.
  5. Plate and ENJOY!
