Prep time: 10 minutes
Cook time: Depends on size of potatoes and heat of grill
Materials:
- 1.5-2 lbs. fingerling potatoes (if large cut them in half)
- 2 tbsp. olive oil
- Salt and pepper to taste
- 1/2 tsp fresh rosemary diced
- 1 tbsp. dried oregano
- Fresh parsley for garnish
Materials:
- In a large mixing bowl combine the potatoes, olive oil, fresh rosemary, oregano, salt and pepper.
- Mix well to combine.
- Place on a preheated grill (i use a veggie grill holder) and grill for 15-20 minutes over medium heat, or until the potatoes are fully cooked through and fork tender.
- Remove from grill onto a clean plate and garnish with fresh parsley.
- Plate and ENJOY!
