Cook time: 40-45 minutes
Materials:
- 1 cup all-purpose flour
- 1 tsp baking powder rounded
- Pinch of salt
- 1/2 cup granulated sugar
- 8 oz. mascarpone cheese at room temperature
- 2 large eggs
- 6 tbsp. unsalted butter (melted and cooled)
- 1 tbsp. vanilla extract
- Zest of 1 lemon
- 1 cup mixed blueberries & raspberries (additional needed for top)
- Powdered sugar for topping
Process:
- Preheat the oven to 350 degrees F and grease a 8 inch round cake pan with unsalted butter or cooking spray. Set aside.
- In a medium sized bowl add in the flour, baking powder, salt and sugar. Mix well and set aside.
- In a separate bowl add in the softened mascarpone cheese and eggs. Using a hand held whisk, mix until the eggs are incorporated and the mixture is smooth.
- Slowly add in the melted butter.
- Add in the vanilla extract and zest of 1 lemon. Mix well to incorporate.
- Add the dry ingredients to the wet and mix (you can switch to a spatula if it’s easier).
- Fold in the fruit and pour the mixture into your prepared pan.
- Top with additional berries (optional) and bake for 40-45 minutes or until a skewer inserted into the center comes out clean.
- Let the cake cool completely and then top with powdered sugar.
- Slice, plate and ENJOY!
