Spring Berry “Coffee Cake”

Prep time: 15 minutes

Cook time: 40-45 minutes

Materials:

  • 1 cup all-purpose flour
  • 1 tsp baking powder rounded
  • Pinch of salt
  • 1/2 cup granulated sugar
  • 8 oz. mascarpone cheese at room temperature
  • 2 large eggs
  • 6 tbsp. unsalted butter (melted and cooled)
  • 1 tbsp. vanilla extract
  • Zest of 1 lemon
  • 1 cup mixed blueberries & raspberries (additional needed for top)
  • Powdered sugar for topping

Process:

  1. Preheat the oven to 350 degrees F and grease a 8 inch round cake pan with unsalted butter or cooking spray. Set aside.
  2. In a medium sized bowl add in the flour, baking powder, salt and sugar. Mix well and set aside.
  3. In a separate bowl add in the softened mascarpone cheese and eggs. Using a hand held whisk, mix until the eggs are incorporated and the mixture is smooth.
  4. Slowly add in the melted butter.
  5. Add in the vanilla extract and zest of 1 lemon. Mix well to incorporate.
  6. Add the dry ingredients to the wet and mix (you can switch to a spatula if it’s easier).
  7. Fold in the fruit and pour the mixture into your prepared pan.
  8. Top with additional berries (optional) and bake for 40-45 minutes or until a skewer inserted into the center comes out clean.
  9. Let the cake cool completely and then top with powdered sugar.
  10. Slice, plate and ENJOY!
