Materials:
- 1 lb. cooked pasta
- 1/2 cup unsalted butter (additional needed for greasing pan)
- 1/2 cup flour
- 2 cups Gouda Cheese grated
- 2 cups Sharp Cheddar Cheese grated
- 2 cups Colby Jack Cheese grated
- 3 cups whole milk
- 1/2 cup heavy cream
- Salt and pepper to taste
- 1 tsp paprika
- 1/2 tsp oregano
- 1 tsp garlic powder
Process:
- Preheat the oven to 350 degrees F and grease a 9×13 casserole dish with some unsalted butter. Set aside.
- Cook your pasta in salted water, drain and set aside.
- Combine all three cheeses and set aside until needed.
- In a pot or Dutch oven add in the the unsalted butter. Keeping the heat on medium/high let the butter melt.
- Add in the flour and cook for 60-90 seconds, stirring constantly.
- Gradually add in the whole milk while stirring.
- Add the heavy cream and continue stirring until the mixture has thickened.
- Remove from heat and add in 5 cups of the cheese (reserve one cup for later).
- Season with salt/ pepper, paprika, oregano and garlic powder.
- Mix well to incorporate everything and until the cheese has melted.
- Add in the cooked pasta and mix to combine.
- Pour half the mixture into your prepared pan.
- Top with 1/2 cup of the remaining cheese.
- Pour the remaining pasta and cheese mixture into the pan and top with the remaining 1/2 cup of cheese.
- Bake for 15-20 minutes.
- Let sit for 5 minutes before serving.
