Cookies & Cream Rice Crispy Treats

Prep time: 10 minutes

Cook time: 5-7 minutes

Materials:

  • 4 tbsp. unsalted butter (additional needed to grease pan)
  • 2 cups mini marshmallows
  • 2 cups large marshmallows
  • 6 cups Rice Crispy cereal
  • 1 cup crushed Oreo cookies

Process:

  1. Line an 8×8 casserole dish with some parchment paper, grease with some unsalted butter or neutral cooking spray and set aside.
  2. In a large pot over medium/high heat add in the unsalted butter.
  3. Let the butter melt and then add in both the mini and large marshmallows.
  4. Lower the heat to low and mix until all the small marshmallows have melted and the large marshmallows have reduced to about 1/2 the size.
  5. Remove from heat and add in the cereal as well as the crush Oreo’s.
  6. Mix well coating the cereal and cookies in the marshmallow.
  7. Pour the mixture into your prepared dish and smooth evenly.
  8. Set aside to cool for several hours.
  9. Cut, plate and ENJOY!
