Racuchy (Polish Apple Fritters)

Prep time: 15 minutes

Rest time: 60 minutes

Cook time: 5-8 minutes per batch

Materials:

  • 1 cup warm whole milk
  • 2 tbsp. granulated sugar
  • 2 1/4 tsp instant yeast
  • 2 cups all purpose flour
  • 1 tbsp. vanilla sugar (can replace with vanilla extract)
  • 1 tsp salt
  • 2 large eggs at room temperature
  • 2 apples (I used Gala but you can use any apples) chopped
  • Powdered sugar for dusting tops
  • Neutral oil for frying

Process:

  1. In a bowl or measuring cup add in the warm milk, granulated sugar and instant yeast. Mix and set aside for 10-15 minutes while the yeast activates.
  2. In a mixing bowl add in the flour, vanilla sugar and salt. Mix to combine.
  3. Pour the activated yeast mixture into the flour along with the eggs. Mix well until everything is incorporated. The mixture is sticky so do not panic.
  4. Cover with a lint free kitchen towel and place the bowl in a warm place until the mixture doubles in size (about 60 minutes).
  5. Once the dough has risen add in the the chopped apples. Mix well to incorporate.
  6. In a skillet add in enough oil for a shallow fry (about 1/2 inch deep) and keeping the heat on medium let the oil heat up.
  7. Dallop about 1/4 cup of the mixture per pancake and cook for 3-4 minutes each side, or until the pancake is fully cooked through.
  8. Plate to a towel lined paper towel while you continue to fry the rest.
  9. Once done plate, top with powdered sugar and ENJOY!
