Prep time: 15 minutes

Cook time: 5-8 minutes per batch
Materials:
- 1 cup warm whole milk
- 2 tbsp. granulated sugar
- 2 1/4 tsp instant yeast
- 2 cups all purpose flour
- 1 tbsp. vanilla sugar (can replace with vanilla extract)
- 1 tsp salt
- 2 large eggs at room temperature
- 2 apples (I used Gala but you can use any apples) chopped
- Powdered sugar for dusting tops
- Neutral oil for frying
Process:
- In a bowl or measuring cup add in the warm milk, granulated sugar and instant yeast. Mix and set aside for 10-15 minutes while the yeast activates.
- In a mixing bowl add in the flour, vanilla sugar and salt. Mix to combine.
- Pour the activated yeast mixture into the flour along with the eggs. Mix well until everything is incorporated. The mixture is sticky so do not panic.
- Cover with a lint free kitchen towel and place the bowl in a warm place until the mixture doubles in size (about 60 minutes).
- Once the dough has risen add in the the chopped apples. Mix well to incorporate.
- In a skillet add in enough oil for a shallow fry (about 1/2 inch deep) and keeping the heat on medium let the oil heat up.
- Dallop about 1/4 cup of the mixture per pancake and cook for 3-4 minutes each side, or until the pancake is fully cooked through.
- Plate to a towel lined paper towel while you continue to fry the rest.
- Once done plate, top with powdered sugar and ENJOY!
