Kielbasa & Potato Sheet Pan Dinner

Prep time: 15 minutes

Cook time: 35-40

Materials:

  • 1 link Polish Kielbasa
  • 4-5 large Russet potatoes cut into 1-2 inch pieces
  • 1 bell pepper roughly chopped
  • 1 large onion roughly chopped
  • 3-4 garlic cloves peeled and left whole
  • 3-4 tbsp. olive oil (additional needed for drizzling over top)
  • Salt and pepper to taste
  • 1 tbsp. paprika
  • 1 tbsp. garlic powder
  • 1 tsp marjoram

Process:

  1. Preheat the oven to 400 degrees F and line a baking sheet with either parchment paper or aluminum foil.
  2. Add the potatoes, pepper, onion and garlic to the baking sheet.
  3. Coat with olive oil and season with salt, pepper, paprika, garlic powder and marjoram.
  4. Mix well to coat all the veggies.
  5. Cut the kielbasa into 2 inch pieces, scoring the kielbasa on the top and bottom.
  6. Tuck the kielbasa into the veggies and drizzle with olive oil.
  7. Cook 35-40 minutes (or until potatoes are fork tender), turning the kielbasa and veggies over mid way.
  8. Plate and ENJOY!
