Materials:
- 1 link Polish Kielbasa
- 4-5 large Russet potatoes cut into 1-2 inch pieces
- 1 bell pepper roughly chopped
- 1 large onion roughly chopped
- 3-4 garlic cloves peeled and left whole
- 3-4 tbsp. olive oil (additional needed for drizzling over top)
- Salt and pepper to taste
- 1 tbsp. paprika
- 1 tbsp. garlic powder
- 1 tsp marjoram
Process:
- Preheat the oven to 400 degrees F and line a baking sheet with either parchment paper or aluminum foil.
- Add the potatoes, pepper, onion and garlic to the baking sheet.
- Coat with olive oil and season with salt, pepper, paprika, garlic powder and marjoram.
- Mix well to coat all the veggies.
- Cut the kielbasa into 2 inch pieces, scoring the kielbasa on the top and bottom.
- Tuck the kielbasa into the veggies and drizzle with olive oil.
- Cook 35-40 minutes (or until potatoes are fork tender), turning the kielbasa and veggies over mid way.
- Plate and ENJOY!
