Prep time: 15 minutes
Cook time: 20-25 minutes
Materials:
- 1 lb. spaghetti
- 2 lbs. fresh mussels (cleaned)
- 2 cups vegetable stock
- 1 cup dry white wine
- 1 onion diced
- 2 garlic cloves diced
- Juice of 1 lemon
- 2 tbs. olive oil
- 1 tsp. red pepper flakes
- 1 tbs. dried parsley
- Salt and pepper to taste
Process:
- Bring a large pot of water to a boil and add a generous pinch of salt. Add in the pasta and cook it.
- In a large skillet with high sides add in the olive oil and onion. Cook 4-5 minutes on medium heat, until translucent.
- Add in garlic, red pepper flakes, parsley, salt, and pepper. Cook for an additional 1-2 minutes.
- Add in vegetable stock and wine. Bring up to a simmer and add the mussels. Cover the pan and cook about 15 minutes, or until the mussels open.
- Add in cooked pasta and lemon juice. Mix well.
- Plate and ENJOY!
