Pasta with Mussels

Prep time: 15 minutes

Cook time: 20-25 minutes


  • 1 lb. spaghetti
  • 2 lbs. fresh mussels (cleaned)
  • 2 cups vegetable stock
  • 1 cup dry white wine
  • 1 onion diced
  • 2 garlic cloves diced
  • Juice of 1 lemon
  • 2 tbs. olive oil
  • 1 tsp. red pepper flakes
  • 1 tbs. dried parsley
  • Salt and pepper to taste


  1. Bring a large pot of water to a boil and add a generous pinch of salt. Add in the pasta and cook it.
  2. In a large skillet with high sides add in the olive oil and onion. Cook 4-5 minutes on medium heat, until translucent.
  3. Add in garlic, red pepper flakes, parsley, salt, and pepper. Cook for an additional 1-2 minutes.
  4. Add in vegetable stock and wine. Bring up to a simmer and add the mussels. Cover the pan and cook about 15 minutes, or until the mussels open.
  5. Add in cooked pasta and lemon juice. Mix well.
  6. Plate and ENJOY!
