Tomato & Bean Soup

Prep time: 15-20 minutes

Cook time: 30-40 minutes

Materials:

  • 1 onion chopped
  • 2-3 cloves garlic diced
  • 1 tbsp. marjoram
  • 1 tbsp. dried basil
  • 1 tbsp. sugar
  • 1/2 tsp. red chili flakes
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • 1 cup pasta of your choice
  • 1 28 oz. can crushed tomatoes
  • 2 cups chicken stock
  • 1 15 oz. can cannellini beans drained and rinsed
  • 1 15 oz. can black beans drained and rinsed
  • 3-4 tbsp. vegetable oil

Process:

  1. In a medium sized soup pot add in the vegetable oil. Keeping the heat on medium high add in the onions.
  2. Cook for a few minutes stirring often until the onions cook down.
  3. Add in the garlic and cook until fragrant, stirring constantly.
  4. Season with salt.
  5. Add in the beans and stir to combine.
  6. Add in the crushed tomatoes and chicken stock. Stir well to combine everything.
  7. Season with marjoram, basil, sugar, chili flakes, paprika, pepper and additional salt if needed. Stir well to combine.
  8. Bring to a boil and add in the pasta. Lower down to a simmer and cook until the pasta is tender (timing will differ according to which pasta you choose).
  9. Remove from heat and let sit for a few minutes before serving.
