Prep time: 15-20 minutes
Cook time: 30-40 minutes
Materials:
- 1 onion chopped
- 2-3 cloves garlic diced
- 1 tbsp. marjoram
- 1 tbsp. dried basil
- 1 tbsp. sugar
- 1/2 tsp. red chili flakes
- 1 tsp smoked paprika
- Salt and pepper to taste
- 1 cup pasta of your choice
- 1 28 oz. can crushed tomatoes
- 2 cups chicken stock
- 1 15 oz. can cannellini beans drained and rinsed
- 1 15 oz. can black beans drained and rinsed
- 3-4 tbsp. vegetable oil
Process:
- In a medium sized soup pot add in the vegetable oil. Keeping the heat on medium high add in the onions.
- Cook for a few minutes stirring often until the onions cook down.
- Add in the garlic and cook until fragrant, stirring constantly.
- Season with salt.
- Add in the beans and stir to combine.
- Add in the crushed tomatoes and chicken stock. Stir well to combine everything.
- Season with marjoram, basil, sugar, chili flakes, paprika, pepper and additional salt if needed. Stir well to combine.
- Bring to a boil and add in the pasta. Lower down to a simmer and cook until the pasta is tender (timing will differ according to which pasta you choose).
- Remove from heat and let sit for a few minutes before serving.
