Materials listed are for one wrap. If you want to make multiple just multiple the materials.
Materials:
- 3 eggs
- 1 tortilla
- 2 tbsp. Mozzarella cheese
- ¼ bell pepper chopped
- 1 green onion chopped
- 1 tbsp. whole milk
- Salt and pepper
- Butter for frying
- 1 slice ham or lunch meat of your choice chopped
Process:
- In a small skillet add in 1/4 tbsp. or so of butter. Keeping the heat on medium high let the butter melt.
- Add in the green onion and bell pepper. Cook for a few minutes for the pepper to soften and set aside.
- In a small mixing bowl add in the eggs, milk, salt and pepper. Mix well to combine.
- In a larger skillet (about the size of your tortilla) add about another 1/4 tbsp. of butter. Keeping the heat on medium/ low let the butter melt.
- Add in the eggs and have them cover the bottom of the pan.
- Top with the cooked pepper and green onion as well as the cheese and ham. Cook for 2-3 minutes until the eggs are about 80% cooked through.
- Top the eggs with your tortilla.
- Using a clean plate slide the eggs out and then slide them back into the pan tortilla side down.
- Cook for an additional 1-2 minutes and then remove from the pan.
- Roll the tortilla into wrap and ENJOY!
- I make multiple at once and once they cool I either refrigerate or freeze them. They heat up great in the oven. 350 degrees F for 10-15 minutes or until fully heated through.
