Materials:
- 2 peppers chopped
- 1 tomato chopped
- 3 small carrots chopped
- ¼ medium sized cabbage chopped
- 2 onions chopped
- 4 potatoes cubed
- 3 garlic cloves diced
- ½ cup tomato paste
- 2 lbs. chicken thighs cubed
- 1 tbsp. paprika
- Pinch of red pepper flakes
- 1 tbsp. dried oregano
- 1 tsp dried rosemary
- 1 tsp dried thyme
- 3-4 tbsp. vegetable oil
- Salt and pepper to taste
- Mozzarella cheese shredded
Process:
- Preheat the oven to 410 degrees F.
- In a bowl or large greased baking pan add in the peppers tomato, carrots, cabbage, onions, potatoes, garlic and chicken.
- Season with salt, pepper, paprika, red pepper flakes, oregano, rosemary and thyme.
- In a small mixing bowl combine the tomato paste and oil. Mix well to combine.
- Pour the tomato mixture over the top of the chicken and veggies and mix everything well to combine.
- Pour into the prepared pan and cover with aluminum foil.
- Bake for 90 minutes.
- Remove from the oven and top with mozzarella cheese. Bake for an additional 10-15 minutes uncovered.
- Let rest for a few minutes and ENJOY!
