Materials:
- 1 onion chopped
- 3 garlic cloves minced
- 2-3 bell peppers cut into strips
- 3 spicy Italian sausages (casings removed)
- 28 ounces crushed tomatoes
- Salt and pepper to taste
- 1 tsp basil
- 1 tsp marjoram
- 1/2 tsp parsley
- 1 tsp sugar
- 2 tbsp. olive oil
- 1 lb. pasta of your choice (cooked in salted water)
- 1 tbsp. Parmesan cheese (optional)
Process:
- Cook your pasta in salted water. Drain and reserve 1 cup of the cooked pasta water incase you need to thin out your sauce.
- In a pot or Dutch oven add in the olive oil and sausages. Keeping the heat on medium/ high cook the sausage while breaking it up with a wooden spoon.
- Cook until fully cooked through, about 4-5 minutes.
- Remove the cooked sausage and place on a clean plate.
- Into the same pot, add in the onion. Cook 2-3 minutes, stirring often.
- Add in the garlic and cook until fragrant, about 60 seconds.
- Add in the peppers and continue to cook for an additional 2-3 minutes.
- Add the sausage back in and mix to combine.
- Add in the crushed tomatoes and mix to incorporate.
- Season with salt, pepper, basil, marjoram, parsley and sugar. Mix well and cook for a few minutes.
- Add in the cooked pasta along with a few splashes of cooked pasta water.
- Mix well, plate, top with some Parmesan cheese (optional) and ENJOY!
