Sausage and Pepper Pasta

Cook time:

Materials:

  • 1 onion chopped
  • 3 garlic cloves minced
  • 2-3 bell peppers cut into strips
  • 3 spicy Italian sausages (casings removed)
  • 28 ounces crushed tomatoes
  • Salt and pepper to taste
  • 1 tsp basil
  • 1 tsp marjoram
  • 1/2 tsp parsley
  • 1 tsp sugar
  • 2 tbsp. olive oil
  • 1 lb. pasta of your choice (cooked in salted water)
  • 1 tbsp. Parmesan cheese (optional)

Process:

  1. Cook your pasta in salted water. Drain and reserve 1 cup of the cooked pasta water incase you need to thin out your sauce.
  2. In a pot or Dutch oven add in the olive oil and sausages. Keeping the heat on medium/ high cook the sausage while breaking it up with a wooden spoon.
  3. Cook until fully cooked through, about 4-5 minutes.
  4. Remove the cooked sausage and place on a clean plate.
  5. Into the same pot, add in the onion. Cook 2-3 minutes, stirring often.
  6. Add in the garlic and cook until fragrant, about 60 seconds.
  7. Add in the peppers and continue to cook for an additional 2-3 minutes.
  8. Add the sausage back in and mix to combine.
  9. Add in the crushed tomatoes and mix to incorporate.
  10. Season with salt, pepper, basil, marjoram, parsley and sugar. Mix well and cook for a few minutes.
  11. Add in the cooked pasta along with a few splashes of cooked pasta water.
  12. Mix well, plate, top with some Parmesan cheese (optional) and ENJOY!
