Cinnamon Coffee Cake

Prep time: 15 minutes

Cook time: 50-55 minutes

Cake Materials:

  • 2 ¼ cup flour sifted
  • 2 tsp baking powder
  • Pinch of salt
  • 1 ½ cups milk warm
  • 4 eggs at room temperature 
  • 1 cup oil
  • ¾ cup sugar
  • 1 tbsp. vanilla extract 

Topping Materials:

  • 3/4 cup sugar
  • 2 tbsp. ground cinnamon 
  • 1 tbsp. instant coffee


  1. Preheat the oven to 370 degrees F and line a cake pan with some parchment paper. Set aside.
  2. In a small mixing bowl combine the materials for topping the cake. Set aside.
  3. In a medium sized mixing bowl add in the sifted flour. Add in the baking powder and salt. Mix well and set aside.
  4. In a separate mixing bowl add in the eggs and the sugar. Using an electric hand held mixer whip the eggs and sugar until fluffy and pale in color. 
  5. Gradually start to add in the milk, oil and dry ingredients. Mix and then continue to do this until all the materials are mixed in.
  6. Pour half of the batter into the prepared pan and top with half of the cinnamon topping.
  7. Pour the remainder of the batter over the top and smooth it out the best you can.
  8. Pour the remainder of the topping over the top.
  9. Bake for 50-55 minutes or until the cake is fully cooked through (a skewer inserted into the center of the cake comes out clean).
  10.  Let the cake cool completely, cut into desired pieces and serve.
