Cake Materials:
- 2 ¼ cup flour sifted
- 2 tsp baking powder
- Pinch of salt
- 1 ½ cups milk warm
- 4 eggs at room temperature
- 1 cup oil
- ¾ cup sugar
- 1 tbsp. vanilla extract
Topping Materials:
- 3/4 cup sugar
- 2 tbsp. ground cinnamon
- 1 tbsp. instant coffee
Process:
- Preheat the oven to 370 degrees F and line a cake pan with some parchment paper. Set aside.
- In a small mixing bowl combine the materials for topping the cake. Set aside.
- In a medium sized mixing bowl add in the sifted flour. Add in the baking powder and salt. Mix well and set aside.
- In a separate mixing bowl add in the eggs and the sugar. Using an electric hand held mixer whip the eggs and sugar until fluffy and pale in color.
- Gradually start to add in the milk, oil and dry ingredients. Mix and then continue to do this until all the materials are mixed in.
- Pour half of the batter into the prepared pan and top with half of the cinnamon topping.
- Pour the remainder of the batter over the top and smooth it out the best you can.
- Pour the remainder of the topping over the top.
- Bake for 50-55 minutes or until the cake is fully cooked through (a skewer inserted into the center of the cake comes out clean).
- Let the cake cool completely, cut into desired pieces and serve.
