Cook time: 25-30 minutes
Materials:
- 1 large chicken breast cubed
- 1 head of broccoli
- 1 cup quinoa
- 1 tbsp. smoked paprika
- 1 tbsp. dried oregano
- 1 tsp poultry seasoning
- Salt/ pepper to taste
- 3 tbsp. vegetable oil
Process:
- Cook the quinoa according to package instructions.
- Bring a pot of salted water to a boil and add in the broccoli. Cook for 5-6 minutes or until broccoli is tender. Drain and set aside.
- In a skillet add in the vegetable oil. Keeping the heat on medium/ high add in the chicken.
- Season with smoked paprika, oregano, poultry seasoning, salt and pepper. Stir well to coat the chicken in the seasoning and cook 6-8 minutes or until the chicken is fully cooked through.
- In a pot or mixing bowl combine the cooked quinoa, broccoli and chicken. Mix well to combine.
- Plate and ENJOY!
