Quinoa w/ Chicken & Broccoli

Prep time: 10 minutes

Cook time: 25-30 minutes

Materials:

  • 1 large chicken breast cubed
  • 1 head of broccoli
  • 1 cup quinoa
  • 1 tbsp. smoked paprika
  • 1 tbsp. dried oregano
  • 1 tsp poultry seasoning
  • Salt/ pepper to taste
  • 3 tbsp. vegetable oil

Process:

  1. Cook the quinoa according to package instructions.
  2. Bring a pot of salted water to a boil and add in the broccoli. Cook for 5-6 minutes or until broccoli is tender. Drain and set aside.
  3. In a skillet add in the vegetable oil. Keeping the heat on medium/ high add in the chicken.
  4. Season with smoked paprika, oregano, poultry seasoning, salt and pepper. Stir well to coat the chicken in the seasoning and cook 6-8 minutes or until the chicken is fully cooked through.
  5. In a pot or mixing bowl combine the cooked quinoa, broccoli and chicken. Mix well to combine.
  6. Plate and ENJOY!
