Lazanki (Pasta with Cabbage & Sauerkraut)

Prep time: 20-25 minutes

Cook time: 40-45 minutes

Materials:

  • 1 jar 24oz sauerkraut 
  • 1 large head of cabbage cut into thin slices
  • 2 onions chopped 
  • Salt pepper to taste 
  • 4-5 tbsp. vegetable oil
  • Pasta of your choice

Process:

  1. Boil sauerkraut and cabbage in separate pots for 15-20 minutes to soften.
  2. Drain both and set aside to cool completely.
  3. Once cooled completely take the cabbage and sauerkraut and using your hands squeeze as much moisture out as you can.
  4. Cut the drained cabbage and sauerkraut into smaller pieces and set aside.
  5. Cook pasta in salted water. Drain and set aside.
  6. In a skillet with high sides, add in the vegetable oil and cook stirring often until softened.
  7. Add in the cooked cabbage and sauerkraut and cook for an additional 7-10 minutes, stirring often and well. Remove from heat.
  8. Add in cooked pasta and mix well.
  9. Plate and ENJOY!
